Steak and Shrimp Fajitas

It’s no secret that Ted’s famous slow-marinated fajitas are one of our most popular meals.  We frequently receive feedback from our guests   raving about the unique flavor and high quality of our fajita meat.  If you’ve ever wondered how we manage to pack so much flavor into one dish, you’re in luck.  Read on to learn more about one of our trademark techniques.

Slow-Marinating Process

The process starts out with premium-quality flank steak, whole breast chicken, or shrimp.  The meat is then marinated in our secret recipe spice blend.  Of course, making sure the spices are just right is vital to ensuring the great taste our guests have come to love, but more important is the amount of time the meat is given to marinate.  When we say “slow-marinated,” we mean that each and every piece is vacuum sealed and  allowed to marinate for  24-48 hours to infuse the seasonings into the meat.

In order to maintain a consistent flavor across all eleven Ted’s locations, the slow-marinating process is handled in a single centralized, USDA-inspected production facility, rather than in each individual store.    This allows for more stringent quality control to ensure each piece meets our high  standards.   Once the meat has been properly marinated, it is shipped to the individual restaurants.  There, it is   grilled to perfection over an open flame before being  topped with caramelized onions and peppers on a flattop grill.

Where’s the Sizzle?

One of the most common questions we hear about our fajitas is why we don’t serve them sizzling like so many other Mexican restaurants. The answer is two-fold.  First, we spend so much time and effort ensuring the flavor of our fajitas is just right that we don’t want to risk ruining the taste for our guests.  The telltale sizzle actually means that the fajitas are still cooking.  The first bite may taste perfect, but after 10-15 minutes, the meat is likely to be overcooked and tough, thus ruining the perfect fajita experience.

The second reason we don’t serve our fajitas sizzling is because we are concerned for the safety of our guests.  As a family restaurant,  we often have children in our dining room and the grease that makes such a satisfying sizzle can also pop and burn an unsuspecting guest.   For this reason, we err on the side of safety and let the famous slow-marinated flavor of our fajitas speak for itself.
